This is driving me insane.

Press Menu, press 'Applications', apps show,then FREEZES. can't select apps, can't scroll and can't lock phone.

Same happens when i press the 'Applications' shortcut in home screen.

Freeze lasts for about 60 secs.

Any ideas?

No, not really.... I am actually experiencing the same problem, never actually counted the time the freeze lasts tho.. Usually my device was freezing before the Anna update but only when I selected the games folder either through shorcut from one of the main screens or through the menu.  Another problem I am facing and believe me I am starting to be completely disatisfied is that I can't update to the 25.007 version through the ovi suite and the battery after the Anna update seems to just drain out in a single day with not that much use really.......
Last but not least is also that I cannot have more than 3 homescreens like the rest of the world is keep telling and mentioning and I really dunno why.....

Forgot to add that when playing a video, a one piece episode for example, which is transmitted with 1,3Mb/s somewhere at 6-7 minutes the screen freezes and a message is displayed "Memory full, close some applications and try again" or something like that, any ideas?Huh Is it that the RAM is full, as the episode itself is 226MB. But never had that problem in the past as far as I remember..

There seems to be an application installed that is the source of your problems. Uninstall all the apps you have and then install them again. There may be an app that accesses the phone data, that's why it freezes.
