Is there a way for me to save files that i have received through bluetooth to a folder other than inbox? It would be a lot easier if they were all in one place (for example photos, songs and videos).

Similar to you pc, on your N8 you can also move files to other directories in the Mass Memory or the SD card
Open the file manager. Click on the memory drive (in your case C:) and look for the (Blue tooth-) directory and file you received and wish to move.
When you found the file keep pressing your finger on it until a new menu opens.
Select copy to folder
Select C: E: or F: memory
Select new folder
etc...
